why do people buy more then one graphics card…?

It’s for really high end systems, when a single top of the line card isn’t enough. So you add a second one for increased performance. For low end cards it’s not worth it, as using multiple cards results in poor scaling(e.g. Adding a second card of the same model and make usually only yields only a 50% increase in performance at the most. usually the performance increase is much lower. It’s also for adding multiple monitors. Also gaming at very high resolutions pretty much requires one to use multiple cards to get decent frame rates. For example gaming at 2560 by 1920 is impossible without multiple cards as putting out that many pixels by a single card is simply far too hard. At 60FPS your card will be outputing 294,912,000 pixels a second. Also some people use their GPUs as additional CPUs(this is possible with CUDA and OpenCL) for additional computing power for massive number crunching, which is useful at things like scientific research and folding@home. Adding more cards = more number crunching power.
